Savoury Olive and Herb Cornbread Loaves: A Flavourful Delight

Ingredients:

- 1/4 cup melted butter

- 200g all-purpose flour

- 100g cornmeal

- 2 tsp baking powder

- 1/2 tsp Kalas Iodized Sea Salt

- 1 tsp granulated sugar

- 1 1/2 cups buttermilk

- 1 tsp water

- 2 eggs, beaten with a fork

- 1/2 cup mature cheddar cheese

- 1/2 cup Garlic stuffed olives

- 4 tbsp finely chopped mixed herbs (basil, dill, and/or parsley)


Instructions:

  1. Preheat the oven to 350 degrees F.

  2. In a medium-sized bowl, mix together the flour, cornmeal, baking powder, salt, and sugar. Set aside.

  3. In another bowl, whisk together the buttermilk, eggs, melted butter, and water. Pour the wet ingredients into the dry mixture and mix until well combined.

  4. Fold in the chopped olives, cheese, and herbs into the batter.

  5. Divide the mixture between the loaf tins and bake for 20-25 minutes or until golden and risen.

  6. Remove from the oven and let cool for 10 minutes. Carefully remove the loaves from the tins and let them cool on a wire rack for an additional 10 minutes.

  7. Serve the warm loaves with butter or enjoy them as they are.
