Ingredients:
3/4 cup Pilaros fire roasted red peppers, chopped
3/4 cup Pilaros garlic stuffed olives, sliced
340ml jar Diana marinated artichokes, drained
2 cups shredded mozzarella cheese
1/4 cup shredded parmesan cheese
1/3 cup red pepper pesto (see recipe here)
Pizza dough, store bought or homemade
4 tbsp Solon extra virgin olive oil
1 tbsp Bernardo balsamic vinegar of Modena
1 tsp Kivotos honey from flowers and conifer trees
1 cup arugula
Kalas iodized sea salt, for taste
Instructions:
Preheat oven to 400 degrees F.
On a round baking sheet, add 2-3 tablespoons of olive oil and spread around to avoid the pizza sticking to the pan. Bring the dough to room temperature and then shape the pizza on the baking sheet.
Spread red pepper pesto over the dough, leaving a 1/2 inch border for the crust.
Add 1 1/2 cups of mozzarella cheese over the red pepper pesto, then top with artichoke quarters, roasted bell peppers, sliced olives, and sliced red onions. Finish with the remaining mozzarella and the parmesan cheese.
Bake the pizza for 20-25 minutes or until the crust is golden and the cheese is melted and bubbling. Remove from oven.
Toss the arugula with 1 tablespoon of olive oil, balsamic vinegar, and a pinch of salt.
Serve slices of pizza with the arugula salad on top.
