Date‑night comfort with a Mediterranean touch 💕🫒
This spinach lasagna layers silky greens, rich tomato, and a golden, melty top—perfect for Valentine’s.

Serves: 4
Ingredients
9–12 lasagna sheets (no‑boil or par‑boiled)
2 cups marinara or Bellaggio Passata
2 tbsp Solon or Irini extra virgin olive oil
1 small onion (finely chopped), 2 garlic cloves (minced)
12 oz (340 g) baby spinach
1 cup ricotta (or whipped cottage)
1 cup shredded cheese (mozzarella/Italian blend) for the melt
1/4 cup grated hard cheese (optional), pinch nutmeg
Salt, pepper, oregano; basil to finish
Steps
Sauté onion in olive oil 3–4 min; add garlic 30 sec.
Add spinach; cook until wilted. Season with salt, pepper & nutmeg.
Mix spinach with ricotta.
Assemble (8–9" dish): sauce → pasta → spinach‑ricotta → a little shredded cheese. Repeat 3 layers; finish with sauce + plenty of shredded cheese on top.
Bake 375°F / 190°C, 25–30 min, then broil 1–2 min for a golden melt. Rest 10 min; garnish with basil & oregano.
