Ingredients:

  • 2 1/2 cups Diana Marinated Artichokes, quartered (drained)

  • 2-3 tbsp fresh dill, chopped

  • 2-3 tbsp fresh parsley, chopped

  • 2 garlic cloves, minced

  • 1/4 cup Solon Extra Virgin Olive Oil

  • 2 cups ricotta

  • 1/2 tsp garlic powder

  • 1/2 lemon, juice and zest

  • Salt and pepper


Instructions:

  1. Preheat the oven to 400 degrees F. In an oven-safe dish, combine the drained artichokes, dill, parsley, minced garlic, and olive oil. Roast in the oven for 20-25 minutes, or until the artichokes are golden and lightly caramelized.

  2. While the artichokes are roasting, prepare the lemon ricotta. In a medium bowl, whisk together ricotta, lemon zest, lemon juice, garlic powder, salt, and pepper until smooth. Cover and refrigerate until ready to serve.

  3. To plate, spread a generous layer of the lemon ricotta on a serving dish. Top with the warm roasted artichokes and garnish with additional parsley or dill, if desired. Serve immediately.
