Recipe for a Pavlova with Peaches and Pistachios

Temperatures are only rising, summer is coming soon! Here is a Pavlova recipe using our Diana peaches in syrup that will freshen up your spirits.
Sweet whipped cream:
- 35 g sugar
- 1 lemon
- 20 cl full cream
- 2 tablespoons plain yogurt
- 200 g sugar
- 1 tablespoon apple cider vinegar
- 1 pinch of salt
- 1 teaspoon cornstarch
- 5 white eggs (or try a vegan egg replacement like Just Egg!)
- Our sliced Diana peaches in syrup
- 1 bag of shelled pistachios
- Our Kivotos honey (optional)
• STEP 1:
Preheat your oven to 302 F.
• STEP 2:
Beat the white eggs vigorously with the salt, until you obtain a firm consistency.
• STEP 3:
When the eggs begin to stiffen, gradually add the sugar, cornstarch, and apple vinegar. The mixture should be smooth and compact.
• STEP 4:
On a baking sheet covered with parchment paper, draw a circle 20 cm in diameter. Using the mark drawn previously, spread the meringue on the baking sheet, to form a crown, or a nest.
• STEP 5:
Lower the oven temperature to 248 F, before baking the meringue for 1h15 (to be monitored depending on your oven).
• STEP 6:
Out of the oven, let the meringue dry for at least 1 hour before assembling.
• STEP 7:
Meanwhile, in a very cold bowl, whisk together: the liquid cream and the sugar, to obtain a firm whipped cream.
• STEP 8:
Stir the yogurt and lemon zest into the whipped cream.
• STEP 9:
Add our Diana sliced peaches syrup as well as a bag of shelled pistachios on top of your meringue as well as the whipped cream. You can add also if you want our Kivotos honey for more toppings.
