- 1/4 cup cashews

- 2 cups fresh basil leaves, firmly packed

- 1/2 cup pine nuts

- 1 cup Pilaros Lemon-stuffed olives, plus extra for topping (sliced)

- 3 garlic cloves

- 1/2 cup Solon Extra Virgin Olive Oil

- Half a lemon, juiced

- Kalas Iodized Sea Salt, to taste


  1. In a food processor, combine basil leaves, pine nuts, cashews, olives, garlic, and half of the olive oil. Process on low speed until a paste forms, then gradually add the remaining olive oil while the processor is still running.

  2. Once the pesto begins to form, add the lemon juice and salt. Scrape down the sides of the food processor and continue processing until the desired texture is achieved.

  3. Taste the pesto and adjust the seasoning with additional salt if needed.

  4. To serve, transfer the pesto to a serving dish and spread it evenly with a spoon. Top with sliced olives and a drizzle of olive oil.
